Lemon Drop Cookies
Lemon Drop Cookies was the winner of our cookie bake-off. Enjoy the tart lemon flavor!
1 3/4 C flour
3/4 tsp baking powder
1/4 tsp Vanilla Bean Sea Salt
1/2 C butter, room temp
1/2 C +1 Tbsp Sicilian Lemon Olive Oil
1 C sugar
3 egg yolks
1 Tbsp Mexican Vanilla
2 lemons zested
Sugar Topping
1/2 C sugar
1 Tbsp Lemon Raspberry Sugar Shaker
Directions
Pre-heat oven to 350 degrees, in a bowl mix flour, baking powder and salt.
In a separate bowl, cream butter, oil, sugar and sugar shaker. add egg yolks, zest and vanilla. Slowly add in flour mic to the wet ingredients. Scoop into small balls and roll in sugar topping. Then put on a cookie sheet and bake for 12-14 minutes.
