Fresh Herb & Garlic Chimichurri Steak

2 1lb Steaks of Choice
Chimichurri
1 cup Mixed Fresh Herbs of Choice (Parsley, Chives, Oregano)
1 Lemon, juiced and zested
1 Large Clove Garlic
Directions
Season steaks generously with Mediterranean Rub and 1 tsp sea salt. Let marinate for 30 minutes or up to 24 hours. Pat steaks dry with a paper towel to remove excess moisture before cooking.
In a blender or food processor combine mixed herbs, lemon juice and zest, garlic, dark balsamic, olive oil, and 1/4 tsp sea salt. Set aside.
Heat grill over medium high heat. Add steak and cook 3-4 minutes per side for medium rare. Let rest 10 minutes before serving.
Top steak with herb sauce and serve with Garlic Parmesan Mashed Potatoes.
Recipe Note
We used parsley, chives, and oregano to create this chimichurri, but feel free to play with the fresh herbs. Cilantro, dill, basil, or mint would also be great options!
